Hello there!


 


In one of my bread machine cookbooks, there is a recipe that calls for powdered fructose.  I've tried doing a search for the ingredient online and I've found granulated fructose, but not powdered.  Is there any place that anyone knows about who carries it?  If not, do you know what an acceptable substitute would be?

Not sure it's sold anymore.  You can probably process granulated fructose in your food processor or blender to get to a powder-like consistency.  But granulated fructose has very fine grains so you can probably use it as is in the recipe.  You can also substitute other sugars or sweeteners.  But, as I recall, fructose has LESS sweetening power than sucrose (standard sugar) so you will need to adjust the quantities to avoid an over-sweet result.
