  • Thai chicken curry wraps

      Used Trader Joe's Mock Chicken into pan with almonds and spinach, added raw diced red pepper and two chopped scallions (also raw) and cilantro instead of parsley. Served on the side of crusty bread and edamame. Very quick weekday dinner.

      I've made this recipe twice now, once with chicken and once without, both times with just 3/4 lb of asparagus and both times with chicken broth instead of water. I really liked this dish and, shockingly, so did my kids. Since the veggies are pretty much just steamed, their flavors really stand out individually, and the couscous is such a rich, textural accompaniment. The second time I made it I used a full tablespoon of lemon juice and I think sticking with around a half tablespoon is better for our tastes. You still get a hint of lemon but it's just an undertone instead of identifiably lemony. I'd also like to try something other than asparagus since I just don't love it. Maybe green beans?

      I love the sunflower seed butter + chocolate + crispy rice + dried banana combo. (Raisins or other dried fruit would be great too!) I think this would be easier to eat in bar form, as in the recipe this is adapted from, because it's soft and sticky and tricky to eat as a finger food. It reminds me of the scotcheroos I used to make as a kid. It is really sweet--I might try it with half as much sugar and honey.

      This recipe did not work out for me. I thought the ricotta I bought was fairly dry (Crumbly ricotta? Did he mean ricotta salata?!? Surely not a pound of it!), but the patties never set up when frying. Flipping them proved disastrous. I thought maybe there was too much oil in the pan, so I spooned most of it out. Next batch, I tried to make them smaller (silver-dollar sized), but that still didn't work. If I was to attempt this again (which I won't), I might subtract an egg yolk and add another tablespoon of flour? It looked like a lovely recipe--too bad.

      These are delicious! I’ve made this a number of times. Great for feeding a crowd. I’ve used ham and sausage. Tried corn tortillas- they added a nice flavor but fell apart when rolling. Next time will layer (like lasagna.) Served with guacamole, hot sauce and sour cream. So good!

      Very tasty, quick and easy to make. I subbed broccoli for beans as that was what I had, I cooked everything slightly longer than the recipe says, and I left out the sugar (I'm sure I would have found it too sweet otherwise) and the cornstarch.

      I used a mandolin for making the zucchini matchsticks and this came together very quickly. This is now my new favorite method fr zucchini in a skillet. Will definitely repeat.

      These were just delicious, but baked up soft, rather than crisp - probably due to the apple - so we toasted them a bit. I got 8 round waffles. We had them for breakfast with maple syrup.

      Meh. A mug cake seemed like such a great idea. The first few bites were just what I was craving: something warm, soft, sweet. It got less pleasant as it cooled, though. And hauling out the ingredients, measuring, and mixing, was no less of a chore than making a full-sized cake or batch of cookies.

      I was looking for something with cauliflower, cheese and eggs, and EYB came up with this before I even typed in the ingredients! I made some other substitutions although nothing too dissimilar. I did like the outcome but the children did not: daughter thought it was too fatty, son thought the vegetables were too soft. Two things to change next time: put under the broiler at the end of the cooking time so it can get brown, and use muffins papers as they stuck to the pan.

      Subbed wood-smoked speck for bacon; cream for sour cream; & roasted my cherry tomatoes, adding a roasted sweet red pepper into the mix. Left out the spinach, Delicious.

      Good, basic, easy tapioca pudding that doesn't require cream or separating eggs. The texture got quite thick and somewhat gelatinous after chilling, but that could be my tapioca. I topped it with pineapple.

      Good, basic recipe for sausages with onion gravy. I added the suggested mustard and Worcestershire sauce for a more flavorful gravy. Note that the mashed potato recipe is separate from this one.

      Good accompaniment to the salsa verde chicken. Depending on how it's being served, I might reduce the lime juice to 1 Tbsp next time.

      In the sauce, I just used 1 tsp sriracha instead of chile-garlic sauce so it wouldn't be too spicy for my son, but I personally would use the full amount of spice. The sauce was good, but quite rich and thick (my coconut milk was very thick), and I ended up adding more lime juice and thinning it with a little water. I used 1 lb chicken breast, and more broccoli and carrots (cooked separately since the broccoli was frozen), plus peas, and there was enough sauce for everything. Quick, easy, good.

      I used less rice (2 rice cooker cups) and more surimi (12 oz pkg); there was enough mayo mix. Didn't feel the need for the extra spicy mayo on top. Served with nori squares, cucumber and avocado slices, and edamame. Delicious way to use surimi.

      Overly drinkable. Didn't have vanilla vodka on hand, so added a little vanilla sugar & a drop of essence. Must stick a couple of vanilla pods into a spare bottle!

      Quick, easy, and really good, especially over cilantro lime rice. When seasoning the chicken, I used more salt and pepper and less garlic powder - use whatever seasoning sounds good (taco seasoning, paprika, etc.). My chicken breasts were larger and took 30 min to cook, even though I pounded them. I used Mexican cheese blend instead of Monterey Jack.

      This was an unexpected surprise: I found a jar of green salsa lurking at the back of the pantry: search EYB for recipes using "green salsa" and this one matched the ingredients on hand. Served it with the cilantro lime rice. Quick, easy, tasty. Worth giving a try!

      I chose this colcannon recipe because the cabbage is sauteed rather than boiled, which generally makes it sweeter and less sulfurous, and I wanted to win over my cabbage-hating son. He liked it! And I used more cabbage than called for. In the interest of time, I cooked the cabbage in a separate pan while the potatoes boiled. Didn't need extra butter on top.

      This was great. Really rich and not healthy-tasting, but flavorful! I reduced the amount of bacon fat and butter. Made DF with vegan butter. Edited on 2nd day: would add much less bacon and butter next time!

      Absolutely delicious sauce! Didn't change any of the ingredients or proportions. I did, however, simplify the cooking. Preheated oven to 450F. Used petrale sole filets that I layed in one layer in a buttered shallow gratin dish. Mixed the sauce ingredients and spooned over the filets and baked 8-10 minutes. This eliminated the need too bake the fish first, then top it and run under the broiler. Couldn't be easier!

      This was good and the flavor really did remind me of a Big Mac. I made 1/2 recipe for 2 people, but with closer to the full amount of lettuce, so I made the full amount of dressing and used a little over half of it. Not a fan of raw onion, i cooked it with the beef. I also added diced tomato and some croutons made from a leftover bun.

      This sauce is yummy and doesn't overpower the scallops. Prep and cook takes just a few minutes. I omitted the asparagus. Served with rice.

      It's hilarious to see a "recipe" (really a method) for this - it's how I've always made tomato sandwiches! Except I don't always drain the tomatoes, just eat the sandwich quickly over a plate, with lots of napkins. Use your best, vine-ripened summer tomatoes.

      I would never have thought to put cranberry sauce in enchiladas, but we liked it. Definitely go with a spicier enchilada sauce to balance the sweetness. A good and different way to use up Thanksgiving leftovers.

      Same as Skinnytaste's easy bagels, but 1/2 recipe made into tiny balls. I doubled the recipe (to serve 3-4) and air fried them in 2 batches. They were cute but tiny; I preferred the larger bagels.

  • Bourbon chicken

      Very tasty, if a bit too salty. Next time I'd either cut back on salting the chicken OR use a low salt/no salt soy sauce. Don't think the bourbon really added anything: could easily just be replaced by Shaoxing cooking wine or water. That said: always good to have a bottle of Tennessee Bourbon in the cabinet..

  • Air fryer salmon bowls

      My salmon was still slightly frozen, but only took 7 min in the air fryer, so check early. Half the sriracha was enough spice for us. However, the sauce seemed to lack something, which I decided was sweetness, so I added some sweet chili sauce and liked it much better. It was still overly salty on its own, but good when mixed with everything. For the vegetables, I used cucumber, carrot, cooked baby bok choy, edamame, and avocado. Tasty overall, but I think there are better sauce recipes (and there was a lot left over).

  • Hawaiian macaroni salad

      There was no way I thought this was going to be able to absorb the voluminous dressing.... but it surely did. I added the optional Spam (just for a giggle) and celery.. a delicious salad that went nicely with the Huli Huli chicken and Honomalino lamb. It's a very generous serving size... I made half for the 6 of us and still would serve 12 as a side! Love leftovers.

  • Air fryer corn ribs

      This tasted and worked very good with air fryer. Changed it up a bit and used Aleppo pepper and smoked paprika which really boosted the taste. But, I will not cut corn into ribs again. Too precarious and whole corn rotated several tmes would work and taste just as well. Skipped on the dip. Don't need it with already robust taste of corn. 5 stars for taste and use of air fryer but 1 star for cutting corn into ribs.

      Fun to make and pretty tasty. Would make again if I had refrigerated crescent roll dough to use up, but wouldn't buy that just for this. With the cinnamon-sugar coating, the croffles didn't really need syrup; sliced bananas would go well.

      I omitted the water chestnuts (didn't have) but doubled the cabbage, so I cooked the vegetables first, then set them aside, before browning the meat. Ground turkey worked nicely instead of pork. With the extra vegetables, I was generous with the seasoning and we also added sriracha on our servings. Quick, easy, tasty weeknight meal.

  • Lazy day lasagna

      I followed the recipe exactly except for adding sautéed chopped mushrooms to the sauce. The next time I would be very careful about adding the brown sugar. The three tablespoons called for were too much and made it too sweet. Maybe start with one tablespoon and taste it before adding a second one. The flavor was good and it went together quickly.

      Quick and easy. Delicious sauce on crunchy juicy chicken. I was out of milk,so used plain yogurt and I think it actually helped the pecan breadcrumb topping adhere better.

Never one to attend a gathering or play date without bringing food, Amy was frequently asked for the recipes. This was the inspiration for Very Culinary, which was born in 2009.

Amy lives in the real world with a house, husband, little kids, and dogs, all craving attention…and no sous chef (sound familiar?) This leaves her on a constant quest to find and create meals that don't leave her standing for hours, but that taste really good.

Her recipes are best made with 70's music in the background and pie on the side.
