One of the best cakes I've ever made. The cake itself was moist, flavorful, and not too heavy. The icing was flavorful without being overly sweet. The mousse filling made it perfect. I made a milk chocolate mousse and used orange liquor instead of coffee liquor. I made a white chocolate icing. The white chocolate icing and milk chocolate mousse complimented each other and the cake well.
What do you make when you have 15 minutes to get dinner on the table, tortilla chips and eggs? This fit the bill- to keep it simple and quick I used jarred salsa. I also added beans and kale to the salsa to up the nutritional ante.
I've been making this recipe for over a decade--it's one of my favorites. It's great over rice as well as in tortillas.
I didn't have bacon and used pancetta instead. It was wonderful! Very flavorful and even better the next day. Next time I will skip the chicken and serve it with a salad.
