      October 2015. This makes a delicious, light dinner. The squash is fantastic. I used arugula instead of escarole.

      You don't really need a recipe for huevos ranchero, but this one is slightly different from ones I'm familiar with, it has a layer of guacamole spread on the tortilla before topping it with an egg and salsa and no cheese. We like this a lot, the guacamole added creaminess and richness to the dish.

      Feels a bit fancy, but is so easy, quick and delicious. Perfect weeknight meal. Especially if using pre shredded Brussels.
