      This is was excellent! It’s widely quoted by other cookery book authors so I had to try it. Served at a party of 10 people — universally liked — it’s a keeper! Served with a bit of sugared whipped cream. It did almost burn on the top (definitely over browned!) so next time will lower the heat (convection) a smidge.
