  • Grilled pimiento cheese and fried green tomato sandwich (GPC)

      Our local cheese store sells a very good pimiento cheese spread and we had lots of green tomatoes left in the garden. This was a delicious combination and so easy. I just dusted the green tomato slices with flour, salt, pepper, and cayenne. Then I fried them in a little olive oil and added them to good bread with the pimiento spread. Can't wait to make it again.

  • Spiced salmon kebabs

      I did not make kebabs, I just used the rub on my salmon steaks. Since I don't have lemon slices between the salmon cubes, I added lemon zest to the rub. I might have used a tad more crushed red pepper flakes than called for, but that was fine with us. The taste of the rub was quite subtle with a hint of heat. Very nice summer dish.

      Made these tonight for dinner using 2 pkgs of TJs lamb chops. Grilled over high heat on the bbq turning often. Came out absolutely perfect.

  • Spaghetti with parsley pesto

      I added about a half cup of cilantro. Very nice, grassy taste with the flavour of roasted nuts highlighted. Super good and super fast to make on a weeknight.

  • Grilled chicken with board dressing

      I grilled two cornish game hens instead of a whole chicken, made the dressing with cilantro and oregano, but instead of lime, I used lemon because that's what I have. The hens cooked quite quickly, stayed moist and was tasty, a good summer recipe.

  • Roasted rosemary potatoes

      These retain a bit of the sour flavor from the cooking in vinegar. Otherwise, they're decent roast potatoes.

      We loved the idea of pairing sweet spring peas with sweeter spring strawberries. On a bed of spicy arugula and with a crunch of almonds, this is a very good salad that we heartily recommend.

      So the flavors are great. Really great. But the whole time we just kept thinking, "Are the kebabs worth it? Couldn't we have saved a ton of time by just chucking this all into a grill basket?"
