      One of my favorite soups. Not usually a fan of tomato soups but the combination with the fennel is delicious. Such an easy soup to make and keeps for days in the refridgerator. Sadly the tomato taste becomes more overwhelming if you freeze the soup. Very easy to make. So tasty and nutritious.

      this is a quick and easy recipe and a family favorite. You can substitute broccoli for the green beans or even asparagus.

      I added some anchovy to the olive oil/garlic before adding the broccoli rabe. I also added chickpeas, per the variation listed under the main recipe. Once I combined the pasta, chickpeas and broccoli rabe I added some pasta cooking water, butter and parmesan to create a glossy, binding sauce. Top with bread crumbs and it is absolutely delicious!

      I have made this recipe several times and love this combination of flavors. Grilled sausage is a good accompaniment for non vegans.
