    This was nice - a good easy weeknight protein with a heavy ginger flavor for sure. I broiled my halibut steaks instead of grilling and it came out fine. Would make again.

• Salmon with sour orange and red onion mojo

    Very nice and simple for a weeknight dinner. The mojo is very good (I sauteed the garlic in the olive oil first since I can't tolerate raw garlic.)

• Halibut, Veracruz style

    Pretty decent for an easy, fast weeknight dinner. Added some yellow squash to the grill pan as well for more vegetables and to make it a complete meal. Would only prepare with really fresh, quality fish as the seasoning is fairly simple.

• Swordfish with lemon, garlic, and olive oil

    Nice, simple way to prepare swordfish. The marinade helps keep the fish moist.

• Flounder with orange salsa

    Extremely light and fresh tasting. Flounder is such a delicate fish, I liked that this allowed its texture and flavor to shine through with minimal other flavor besides the citrus.

• Brochettes of roasted pepper-wrapped scallops

    Easy and tasty. The roasted pepper wrapping was a nice, lighter way to give the scallops some extra flavor and keep them moist when grilling.

• Chicken and mushroom kabobs

    I realized after I started marinating the chicken that I was out of mushrooms. Made with zucchini and baby onions instead. The dry herb marinade was a nice change of pace but this really needed to be served with some kind of sauce on the side to keep it interesting. I made a quick honey-mustard dressing to go with it and served on crisp lettuce greens.

    This is pretty much my "go to" recipe for a flank steak marinade, I've made it dozens of times, no doubt. The trickiest thing is getting the grill on the steak just right.

• Mexican-style skirt steak

    This was a decent marinade for skirt steak, but maybe not a favorite. The vegetables were very nice though and it all sort of came out tasting like fajitas.

• Sesame flank steak

    This was a DELICIOUS flank steak marinade - one of the best I've tried to date.

• Grilled pork chops with fried sage

    Did not care for this. Even after the full 3 hour marinade the pork came out dry and lacking in flavor. Perhaps would have been better chopping the sage to add to the marinade instead of just putting it on at the end. Definitely NOT a repeater.

• Country bread and pork tenderloin skewers

    Have made this dozens of times and every time it's a huge hit. I'm still no master at grilling so burning the bread is about 50% chance for me. Have made with both pork tenderloin and pork shoulder, We like the shoulder as it's more fool-proof from drying out.

• Wine-scented leg of lamb

    Marinated overnight and cooked on an indoor grill pan (next time would do it less than recommended time, 30 minutes instead of 35-45.) Flavor was excellent from the marinade; the S.O. loved it because it wasn't too gamey and meat was very tender.

• Italian bread salad with tomatoes and basil

    I don't like cucumbers so I made this with diced kohlrabi instead. A good version of panzanella; I liked the dressing the best because the mixture of red wine and balsamic vinegars was different but very tasty.
