This is fabulous. I love to make it when spring onions are fresh at the farmer's market. Most times I make it without the truffles and it's still wonderful. You just have to be patient while the onions cook down slowly - the slow cooking with no browning is how the puree comes out so exquisitely sweet. A sprinkling of fleur de sel at the end... Yum.
