      These are tasty. I made a half batch to go with Chili, should have made a full batch as they were small. Easy to put together. I didn’t have swiss cheese so used gruyere.

      We absolutely love this! It's so much more than just black beans and macaroni. I used Rancho Gordo ayocote negro beans. Reduced the amount of macaroni to one cup and it was still a lot of pasta in proportion to the beans. May reduce it to 3/4 cup next time. Used 2 whole jarred roasted red peppers. Glugged in a bit more red wine than called for. Flavor packed soup! Served with grilled provolone and prosciutto sandwiches on thinly sliced Scotch Unkneaded Bread (bread recipe on pg.115 of this book).

      This is a delicious, flavorful, very dense chewy loaf. Reminds me of the bread in the commercial bread aisle in the grocery store that's square,thin slices of dense bread wrapped in cellophane. However this tastes much fresher and tastier. Especially good toasted. Will make again. Would be great with lox and cream cheese.
