    Nut Cake (pg 93). This is a very simple cake that is perfect for fika or potlucks. It can be made with any nut- almonds, pecans, walnuts, or hazelnuts. I’ve been baking it for years. Notes: 1) The recipe calls for whole nuts to be blitzed in a food processor. 2) I prefer an 8 inch pan to the called for 9 in because the cake is too thin. 3) Don’t hesitate to add spices to complement the nut being used.
