      Sigh! And the search goes on for a biscotti that actually tastes like coconut. These are good but you mostly just taste the macadamia nuts. I used Cruzan coconut rum in place of coconut Amaretto and doubled the amount of coconut (which I also toasted). Maybe try adding at least a teaspoon of coconut extract next time.

      Don't know why but doubling the recipe just does not work for me. They are consumed as quickly as I can produce them so will keep making them x 2 - sometimes x3 and 4. Great biscuit.
