  I think it's better to brown the chicken ( I use thighs) on the stove top before proceeding with the recipe. Otherwise, the chicken doesn't brown nicely.

  Need to play around with the ratios in this recipe- dough was a little dry but was very rich and buttery. Milk to mushroom ratio seemed very high, so I used less milk, and it didn't thicken much at all during cooking like the recipe said it would. However, most of it evaporated in the oven so would use the suggested amount (or a bit less) next time. Despite that, the result was spectacular.

  A delicious variation on the usual mashed potatoes- next time use a bit less heavy cream, it got a little too soupy. Will definitely make again.
Poached leg of lamb with mustard cream sauce and tarragon (Gigot Anglo-Normand à la crème moutardée)

  What a good sauce for lamb! Instead of plain cream, I used cream + sour cream, 50/50. Kind of a home-made crème fraîche. I recommend.
