      This has become one of my favorite recipes. I use the broiler instead of a grill, since I don't have one, and I often use all radicchio and leave out the romaine. Treviso is particularly good. If I'm making it just for myself, I use double or more the amount of anchovy called for.

      My favourite pad Thai recipe! I was never happy with my pad Thai until I watched the video and made this recipe. I have used tamarind or lime juice and both work well. Once you've got the basic method down, you can adapt this recipe easily; Therefore it's the only recipe I use. A search on Fine Cooking's website will locate the video. Video no longer available)
