Notes about Recipes in this book

  • Creamy salsa soup

    • ecasey830 on December 27, 2013

I add brown rice and chipotle chicken sausage to make this soup a heartier meal.

  • Hearty vegetable stew

    • jumali on October 17, 2011

I must have had an abnormally large bunch of kale because it seemed to dwarf the other ingredients. I ended up adding another 14.5 oz can of tomatoes to balance it. I also added a lot more spice (Penzeys Tuscan Sunset) because it seemed rather bland. Overall it was extremely easy and pretty tasty. I feel rather virtuous for eating it!

  • One-pot chicken and rice with Swiss chard

    • jumali on September 21, 2011

Loved this--the lemon zest adds a lot of flavor.

    • swiand on October 09, 2024

Family enjoyed this as a Sunday Night dinner that allowed family to get to their evening events. The fresh chard was wonderful.

  • Thai shrimp stir-fry

    • DJM on January 14, 2012

Needs some added heat-a Thai chile or red pepper flakes. I used peanut oil instead of olive oil.

  • Harvest vegetable pancake with greens and goat cheese

    • veggie va on June 22, 2014

  • Corn and zucchini orzo salad

    • ecasey830 on June 12, 2015

I used quinoa instead of orzo
