Notes about Recipes in this book

  • Barbecued mini ribs

    • veronicafrance on August 26, 2013

These are good, but rather than attempt to cook them on the barbecue, I first baked them in the oven for 40 minutes, then finished them off on the barbecue. They do need to be thoroughly cooked.

  • Broad beans with bacon

    • veronicafrance on February 26, 2015

This is a truly classic Catalan tapa, one of my favourites. As usual Pepita gets it spot on -- although it's more normally made with jamón, which can of course be substituted for the bacon. Use small, fresh beans. You can make it in advance and serve warm rather than hot.

  • Bacalao in spicy tomato with potatoes

    • veronicafrance on March 07, 2013

This is a really delicious one-pot dish and very easy to do.

  • Chicken chilindrón

    • veronicafrance on April 18, 2016

Not bad at all. The sauce would be better with actual choricero peppers. If you don't have any, don't stint on the pimenton.

  • Lamb with red peppers and Rioja

    • veronicafrance on February 11, 2014

Simple and pretty good. We used a jar of roasted peppers, adding them later -- it would probably be better with fresh.
