      T liked a lot. Used rotelle, 1 cup frozen peas, Spanish olives, frozen corn, Olive Oil Vinaigrette from Vegetarian Cooking for Everyone. Parsley and lime juice on the side. Try broccoli next time.

      I used my own simple vinaigrette with this salad, and did not have any baked tofu on hand, but it was still a pleasing combination of elements.

      Very tasty & satisfying--a substantial main dish for me & side dish for hubby. Flavor of dressing was not overpowering, but added a nice note. I used lime juice rather than lemon for the dressing, & added cherry tomatoes from the garden. This dish would work well for a picnic or potluck event.

      I enjoyed the interesting twist of mashed sweet potato in this mac and cheese (husband was not so impressed, however!). The sweet potato blends right in with the cheese sauce and provides a subtle flavor boost. I probably used about twice the recommended amount of sweet potato.

      Quite nice. Would never have thought of combining tofu and potatoes. Added Eastern Mediterranean spice mixture from Oaktown Spice.

      Very nice, easy, great with summer fresh vegetables. I used a little less black beans than listed (just one small can) and added the kernels from 2 ears of sweet corn.

      Two 17 year old boys gave these a big thumbs up rating. Easy to make, no creaming of butter & sugar to do. I used ginger-cinnamon yogurt since there was no vanilla yogurt, which gave them a little extra zing.

      Mashed one large banana (about ½ cup) to sub for an equal amount of yogurt. Used plain yogurt with no increase in the sugar. Folded in 1 chopped banana, ½ cup chocolate chips, and ¼ cup millet. Needed a good half cup of buttermilk, and it was still a stiff batter. We enjoyed these, but wished for even more banana. Next time I'll mash one and add chop two.

      Enjoyable especially with ice cream but not as sweet as a typical cake or brownie. Good snacking cake with milk and/or ice cream. Easy to make—one bowl.
