    The first time I made this it came out perfect. The peaches were juicy and the finished galette was rustic and sophisticated at the same time. We loved it! Since then, I've made it many times, sometimes using different fruits and also trying different recipes for the dough. Inevitably, since that first time, the fruit juices have oozed out through small tears in the pastry. Make sure to bake this on a pan with a rim! It always tastes fantastic.
