Three stars for the recipe (since it's not really a recipe), but five stars for the method. You roast the chops at high heat on a rack over a quarter-inch bed of salt to eliminate smoking. And it works! Amazing!

Very tasty. Used canned Centro San Marzanos. Forgot salt; fine without. Next time slice olives to distribute flavor.

Liked cooking shredded potatoes this way. This was good, but it could have used more punch--maybe just more garlic and pepper. A sprinkle of Parmesan wouldn't hurt any, either.

Made this with frozen favas from Chinatown, frozen artichoke hearts from TJ's, and frozen peas. Very tasty, especially with some grated Parmesan.

Unfortunately, the wonderful green peppercorns recommended by breadcrumbs seem no longer to be available. Made this with Delicias brand using full amount of rinsed whole peppercorns and it was still wonderful.

Couldn't find Midnight Moon, but it was excellent with whatever aged goat's milk cheese I picked up at Fairway.

These were just terrific.They were a bit fussy, but because you can prepare them ahead of time, by the time you eat them you’ve forgotten anything that annoyed you during the prep. I can imagine piling these on a platter and serving them as an hors d'oeuvres. With plenty of napkins. Mmm-mmm good.

Probably an excellent preparation for striped bass as well.

Great recipe, but be careful not to over season the scallops or they will overwhelm the lovely, delicate coulis.

Best version of steamed fish with scallions and ginger I've ever had. Sauce is superb. Must serve with rice.

Can use regular chives and add one sliced garlic clove, but much better with Chinese chives if available.

Terrific! Recipe is easy to halve, making two generous servings.

Terrific vegetarian dinner as well as a side for simply grilled or roasted meat or fish. Good as leftovers, too.
