With gardens and farmers' markets in bloom (at least in the
North), we thought a short refresher course in how to store greens
would be appropriate. With the help of Food52, who
explains the details in this article,
here are some helpful pointers:
- Don't wash your greens until you're ready to use
them
- Remove any wilted or slimy leaves right away
- Store them in the crisper drawer
To actually keep the greens, choose between:
- Storing them in a container with a
paper or dish towel draped over the top - if you buy them in
a plastic clamshell, just cut off the top of the clamshell
container and then top with the towel.
or
- Roll the greens in a towel.
And for those looking to expand their use of greens, here
is a list of books on
greens that our members own, sorted by popularity. Lots of
great ideas - enjoy!
