Lorraine sat down with us to discuss her latest cookbook as well as the renewed interest in baking.

    I make my own fruit sorbets. I sometimes lighten up rich desserts like cheesecake with half neufchatel or by adding zero fat yogurt to loaf cakes.

    A super moist fat free, sugar free and egg free fruit loaf made with Dried Apricots, Pears, Prunes and Figs plus Banana, wholemeal flour and almond meal, courtesy of French chef Gabriel Gate. It's been on my menu for over ten years and is even doubles as a great high fibre breakfast.

    I have replaced most of my standard go to desserts with lactose free vanilla yogurt that I put Salba Chia seeds into and let sit over night. The addition of berries and nuts makes it like fruit and cream.

    I use 1/3 less fat cream cheese and fat free sour cream with splenda to make a cheese tartlette that's what I call it. It is close to a cheesecake. I love DARK CHOCOLATE. So I always have that on hand when I am having a real sugar craving and a little piece of that helps but when you want something baked it is hard to think of anything else so I would love to know about this cookbook.

    I have a strawberry soup recipe that I make as a drink. strawberries, yogurt, apple juice, water, cinnamon, cloves and sugar.

    Baked fruit is my healthy go-to dessert – I grab whatever is floating around my kitchen and needs using up (either apples, plums, nectarines or pears), cut in half, and sprinkle with cinnamon and drizzle with honey, and bake for 15 minutes – serve with low-fat vanilla yoghurt. Or, a another twist on the ever-popular strawberries & balsamic vinegar combo, is to warm the balsamic-marinated strawberries ever so slightly, and stir through fresh mint leaves. Serve with ice-cream. Heaven!

    I like crisp refreshing melon sorbets, in summer when the melons are so sweet and delicious. Make two, one with honeydew and the other with cantaloupe (I'm not sure what you call these in the US, they're the orange coloured ones) and then put a scoop of each in a cocktail glass and garnish with those pretty little blue flowers that restaurants use.
    I don't want to win this book for myself, I want it for a single mother friend who has just blogged about borrowing it from the library and can't afford to buy it. She says she wants to cook almost every single recipe in it!

    Tempted to say fresh fruit… But actually I love having a small serving, infrequently, of a very rich dessert. Sweet things I am trying to get out of my daily life so that they are genuinely a treat. If it's not regular, and not a total gorge session, there's nothing wrong with being rich and indulgent – I think!

    Naturally sweetened mango basil sorbet. No sugar added. Just make sure to use a ripe, sweet mango. I usually freeze all the flesh and have it all portioned ready to go whenever I feel like having a refreshing light dessert. In a blender, I just blend the frozen fruit with a little water and fresh basil leaves. Done!
