    For me, a quick dinner is not the "quick-to-cook-or-prepare" as much as "cooks all by itself for 30 minutes" while I attend to the rest of the family, homework, etc. Steamed salmon and veggies, for example, does its own "quick" thing without me busy stirring or checking the oven for doneness.

    A bowl of pre-cooked quinoa, layered with black beans and cheese and topped with homemade salsa. Quick, easy, healthy, and delish!

    I don't work full-time, so I'm able to cook from scratch nearly every day. So I don't actually have a "quick" go-to meal, and if so, it's by coincidence only. I assume leftovers doesn't count ;) However, one of my friends is due with her 3rd baby soon, so if I win this I would love to give it to her to keep her inspired in the kitchen :)

    Homemade pizza - I freeze the bases in batches then top and cook straight from frozen - easy and quick!

    My favorite--at least in the winter--is the Mixed Bean Chili in Mark Bittman's Kitchen Express (p. 122). All it requires is onion, garlic, olive oil, spices, and canned beans and tomatoes. You can add ground beef (or walnuts) if you wish. The bonus is that you may have some to save for another meal or two later!

    Baked fish (usually salmon) with mustard sauce, spring onions and coriander with Basmati rice. It is a typical Indian meal on the table in 20 minutes prep to finish.

    Mine often changes with the seasons but a homemade veggie soup is a great one for the cold weather we've been having lately and if you use canned tomatoes and frozen veggies it can be ready in a short time.

    A humble lentil bowl! Just some puy lentils cooked in stock, along with chopped tomatoes, cucumber, shredded lettuce, boiled egg, cubed feta... Whatever tasty things are on hand. It's so comforting, easy to prepare and clean up after.

    Jill Dupleix's Teriyaki salmon on snowpea salad is a lovely quick dish. I sometimes serve stirfried bok choy or stirfried brocolli with chilli on the side as well. Fast, healthy, nutritious and delicious.

    My "Sunday night pastie"! Puff pastry sheets from the freezer filled with leftover vegies, cooked tuna, ham or chicken or whatever tasty combination is in the fridge, plenty of grated cheese; edges sealed and put into the oven until golden and heated through.

    I always have some cooked legume in the fridge. I toss it with some greens (arugula, lettuce, spinach), add olives, roasted pepper, pickled mushrooms (whatever I have in the fridge), salt, pepper, chili flakes and pumpkin seed oil.

    I always keep bags of organic frozen brown rice in the freezer and I just stir fry some fresh veggies (whatever is on hand) and add a couple of eggs to the mix. Filling and 10 minutes max. Even better if I have some stale bread for toasting up with garlic.

    Food network Turkey Chili delivers alot of flavor in a short time. Also a big salad with some grilled chicken breast is a great weeknight healthy meal.

    Bruce Cost's recipe for Beijing noodles -- it's basically just ground pork, scallions, and soybean sauce over noodles. Done in a flash, delicious.

    Pasta with chopped walnuts gently heated in a good olive oil with a garlic clove (removed before serving) and topped with grated Parmesan or bottarga if I have it on hand. A green salad on the side. I always have these ingredients on hand -- well, not always the bottarga. And of course some wine! A piece of fruit in season and maybe a bit of cheese along with it. The whole meal is assembled in less time than it takes the water to boil for the pasta so I can set the table too. If I want to vary it, that is easy, depending upon what I have on hand, but my pantry or refrigerator always has anchovies, eggs, a variety of dried herbs and dried pepper flakes, so it is a meal which never grows boring.

    Pasta in the pan, fry some garlic, onions and bacon while its cooking. Mix a carton of cream, 90g parmesan and 3 eggs. Drain the pasta, stir the sauce through while its hot then mix in the bacon and onion. The best carbonara on the plate for 4 in 15 minutes.
