My favourite dinner recipe featuring eggs is a simple Middle Eastern dish. It’s basically poached eggs floating on garlic-infused yogurt and drizzled with smoked-paprika butter. Add a slice of toasted granary bread and it’s healthy comfort food that hits the spot any time of day.

A quick meal that was often dished when I was growing up that I still turn to is a plate of rice with 2 eggs sunny side up or over easy served over top, and well seasoned with salt. You chop up the eggs into the rice and let that yolky goodness get all mixed in to the rice. Seems almost too simple but is amazingly delicious!

There is a Vietnamese dish that features grilled pork and a runny egg on top of rice. Yum!

  • MargieAnne  on  5/1/2014 at 2:29 PM

For a healthy choice, I should say "a vegetable-rich omelet," but in my heart of hearts, I would rather have a Grand Marnier souffle made with almond paste and served with a glass of champagne. If I had it with a fruit salad, couldn't that count as an entree?

  • kbennall  on  5/7/2014 at 7:05 PM

Dang, that's hard - I have to choose between shakshuka and the marinated eggs that go in ramen? I guess I choose ramen, then - I could eat those salty, tangy, rich marinated soft-boiled eggs all day.

We raise our own chickens and there is absolutely no comparison to store bought eggs!! Marigold yellow and so plump! They make such a difference in every recipe, but our family favorite is in fresh pasta ("homemades") - delicious and such a beautiful color. Runner-up would be Quiche Lorraine, which is my husband's fav.
