  For me it's the way one's cuisine enters the history of another's…like Persian food entering India and becoming dishes like biryani. Or the way the Central American tomato became ingrained in Italian cuisine. The list goes on!

  Creole Cuisine of Louisiana (US) is a fusion of French, West Africa, Spanish, Caribbean, German, Irish (and many more) influences. The history of this food culture is deep and as rich as the food itself.

  Vietnamese food pre- and post-colonization. I also love Dan Jurafsky's book, The Language of Food, because it presents a fascinating look at the intertwined culinary history of many world cuisines. There are some surprising connections.

  And I'm bummed that Canadians cannot win this book. American publishers dominate the Canadian books business, and it would be nice if they acknowledged the fact that we are customers.

  For the past five years I have set a goal to learn a foreign cuisine by cooking that cuisine at least three to four days every week. I started by cooking my way through Claudia Roden's The Food of Spain and Penelope Casa's Tapas. Last year I spent cooking Indian food starting with Madjur Jaffrey's Invitation to Indian Cook and then relying on Pushpesh Pant's Food of India and other Indian cookbooks on the different areas of India like the Spice Coast. This year I've moved further east and been cooking Asian from a few different cuisines, Kenneth Hom's Travels with a Wok, Daguid's Seduction of Rice, But I've been taking side trips to Korea as well, so this is sort of a fusion year for me. Just love traveling the world through my cookbooks. All food intriques me.

  Being british I'm always told we have no good food of our own, that for food culture we should look to other countries but I am intrigued by how food has changed in Britain through history as our travels around the world and bringing ingredients home has vastly changed our diet. Without bringing new foods home we wouldn't have spices, sugar or even potatoes and where would modern british culture be without the foods that come from all these ingredients. Just like our alphabet our culinary traditions have been drawn from all over the world.
