Cookbook giveaway – The Handmade Kitchen

The Homemade KitchenIn her second cookbook, The Homemade Kitchen, Alana Chernila exalts the beautiful imperfections of food made at home and extends the lessons of cooking through both the quotidian and extraordinary moments of the day. Alana builds upon the concept of her previous book, The Homemade Pantry, with recipes for kitchen staples such as chèvre, tofu, kefir, kimchi, preserved lemons, along with recipes and ideas for using them.

    Unfortunately, I buy most pantry staples. But I do try to buy the highest quality organic staples.

    Graham crackers. Marshmallow fluff. Candied citrus peel. Flavored sugars. None of these are things I'd consider "staples," but they're all important items I would rather, and often do, make instead of buy.

    beans: pintos, kidneys, black, navy, cannellini, garbanzos–I prefer buying dried and cooking them myself instead of buying canned

    Hmm…I sometimes make my own nut butters and make my own stocks and freeze them. I like to bake my own bread sometimes too

    Anything that has a high salt content. My husband has a heart issue, so I try to make all my own soups, tomato sauces, and french fries.

    Chicken stock and beans. I cook big batches of both and try to always keep some in the freezer.

    Candied ginger (Alton Brown's recipe). I keep it for recipes, but also for a quick sneaky snack. Be sure to dry it thoroughly as my last batch molded..

    I like making my own apple butter, so I can control the sweetness. Too many of the bottled ones add a ton of extra sugar that just isn't needed

    I've been making my own roasted tomatoes and tomato puree with garden herbs and canning them for the season at the end of Aug into September when tomatoes are at peak at my CSA and from my garden. Having such fresh tasting tomatoes is so much better than store bought. I can control the salt content, the seasoning and don't have to worry about BPA in cans. While I'm canning, I weigh them out so they are even and a 16 oz each for cooking.

    If I have time, I like making bread and marinara sauce. However, the markets now have some good freshly baked bread and local Italian restaurants sometimes sell their sauce. I have considered stock, but it seems like far too much work in stockpiling bones for months.

    I prefer making bread, sauce, and chicken broth. I can't remember the last time I bought a box of broth! We always save our chicken bones and vegetable scraps and then toss in the crockpot, simmer away!

    If only I had more time. But having a vitamix makes it far easier to grind my own rice flour, make my own rice milk, etc.

    In general, I buy most pantry staples. But I almost never buy bread, preferring to know exactly what is in the bread I serve my family. And I soak and dehydrate all nuts to make them more digestible. I would like to learn how to make more staples.

    I have been making a variety of Mexican sauce bases. I also make flavored Asian oils, like chili oil or 5-flavor oil, and make candied citrus peel for ice cream. (I make my own ice cream, too, but that doesn't last in the pantry, lol!)

    I have gone through phases in my life where I have had to make almost everything from scratch; although I don't have as much time these days I make all of my own jams and jellies, pickles, hot sauce, stocks, ice cream (a staple!), baked goods (except bread nowadays), etc. It helps that I work on a farm so I have access to great food.

    I prefer making my own caramel. The first time I made it, my husband thought it was a miracle. I threatened to make homemade marshmallows this thanksgiving, but I knew I would only be punishing myself because he would be constantly be asking me to make him some.
