    Right now it is Hearty Roots (our CSA) fresh tomato sauce with fish or pasta. Pan seared sea scallops and blackened green beans. Spring? Asparagus anything.

    Any one-pot dish out of my rice cooker and "The Ultimate Rice Cooker Cookbook": Japanese-style rice with toppings, Greek feta and shrimp pilaf, spiced millet, etc.! Would love to win this as time is at a premium in my household!

    In the summer, it's a big salad of whatever, really--some sort of greens, lots of chopped vegetables (and often fruit), seeds, nuts, and more. In the winter, it's miso soup/stew with dried seaweed and mushrooms and whatever vegetables need to be used up (potatoes and root vegetables are the best here).

    Sliced taters with diced garlic and onion simmered in butter/olive oil-topped with vegetarian italian sausage. I could eat it every night.

    Wheat flour roti roll with shredded coleslaw mix. I add a tempering of a little sesame oil with mustard seeds and sliced green chillies. Salt, lemon juice and sometimes a little ginger garlic paste.
