    For me, it kind of works the other way around. My body says that I need to do even more healthy eating than ever, so I'm in search of creative ideas.

    I have always been interested in eating healthy food, but it was my son (and his adverse reaction to artificial and processed foods) that has really made me realize how important it is to eat healthy (and natural) foods.

    Zucchini has become my new goto instead of pasta. I got one of those gadgets that turn it into long curls and I love it. Even my kids love it now instead of pasta.

    When I became vegetarian over a decade ago, it was like a whole new world opened up to me. Now I mainly cook healthy Mediterranean / Middle Eastern dishes loaded with seasonal veggies, whole grains, and a drizzle of olive oil (I also follow a fairly low-fat diet). I've heard lots of great press about OSG, but have never cooked from one of the cookbooks!

    Going plant-based/vegan forced me to reevaluate my hatred of vegetables. Farmers markets helped with this. Turns out I'm not such a hater.

    Farro makes me cook better. I have it with roasted vegetables and sometimes greens and feta cheese, and because it has some protein, it helps me get away from having too many carbs.

    Actually, it's been reading about CAFOs, antibiotics, hormones, and the unfortunate state of the seafood industry that I've been inclined to eat fewer animal products--and much more of everything approaching a vegan diet.

    When I read Eating Animals it finally motivated me to cut the dairy and eggs out of my vegetarian diet! I've been happily vegan for 5 years and Angela's recipes have been some of my staples!

    I try to fit in beans/proteins like tofu and tempeh, grains or rice, and greens at every meal, and the numerous possibilities for combining these simple ingredients with flavors from cuisines all over the word helps me look forward to eating healthful, homemade meals. And I also love that people don't look at me funny for wanting to eat vegan or vegetarian now...most people are starting to accept that not every meal has to have meat.

    I've always tried to eat healthily, cutting meat consumption to a minimum, eating organic, making most food from scratch. But joining a CSA has made me eat even more vegetables and experiment more.

    The "Straight from the Earth" cookbook by Myra and Marea Goodman really inspired me to start making animal-free meals a regular part of my life - the Slow-Simmered Beans with Tuscan Kale and Bulgar is one of my favorite make-ahead meals ever. I bought the first "Oh, She Glows" shortly after and have enjoyed adding recipes from it to the rotation, as well.

    Documentaries like Food Inc was what got me started on my path. Six years later, I am not only eating better, but I also have huge understanding concerning nutrition and also our broken food system. I also do what I can to to make my voice heard concerning our food system.
