    I would try the Spaghetti with Quick Roasted Tomato Sauce. I would make enough sauce to have leftovers for other purposes (eggplant parmesan comes to mind).

    The only thing I would not look forward to about owning this book is having to narrow down one recipe to make first, but it's hard to imagine not jumping straight to the Grilled summer veggie and barley salad with basil and sun-dried tomato dressing. Pretty much all my favorite flavors mashed together - AND it's vegan? Too good to be true.
