    mmm, roasted aubergine with tomato, quinoa, and toasted nuts...or cumin roasted aubergine stuffed with quinoa tabbouleh! i love eggplant too much.

    So difficult to narrow down to one choice. One of the first would be Squash and Tomato Coconut Curry. I can eat curry any time of year.
