Nowadays, from Sydney to Tokyo, and London to Seoul, queues form to enjoy ricotta hotcakes (‘Sydney’s most iconic dish’ Good Food 2019), fluffy scrambled eggs, lively salads and punchy curries. It is a bright picture of Australian food that has travelled across the globe, packed with fresh flavours and local produce, healthy but never preachy, whose main ingredient seems to be sunshine itself. The plates at any of Bill’s restaurants are more sophisticated today, reflecting decades of global experience and culinary creativity – but the warmth of atmosphere and joy of eating remain the same.

    Oooh, this is a tough one! So many good looking recipes!

    I guess, since I am a bread fanatic, I would probably try the coconut bread first, it looks amazing. My mouth waters as I write this! 🙂

    It’s so difficult to choose what I would make first. Dhal is a staple in my house, so the yellow split pea dhal with date and tamarind chutney would be a contender. I no longer eat meat so the braised tofu and mushrooms with black beans and chilli tomato sounds like a hearty, umami bomb. And the chickpea pancakes with spice roast cauliflower and carrots sounds right up my street. But, if I’m honest with myself, the thing I’d probably make first is the miso caramel brownies!

    Glutengirl would of course make a bread recipe first! The coconut bread had my mouth watering. I have most of Bill Granger’s cookbooks, they are wonderful. I purchased Sydney while visiting my daughter in Sydney, Australia more than 10 years ago. It’s been a favorite ever since. I would love to win Bill’s new cookbook!

    Bill Grainger’s recipes use easily obtainable ingredients and the cooking methods don’t require days of prep, which makes them accessible to me as I live on a remote island, live a busy life and can’t access exotic ingredients., unless you count wallaby and escaped Atlantic salmon!

    I would cook “Chickpea pancakes with spiced roasted cauliflower and carrots” as this would fit with my 2021 focus on cooking more plant based dishes as well as trying new with chickpea flour (which I use mostly in Indian dishes).
