Yes, I scored three jars of Anya's Apothekere fermented honey - jalapeno, onion, and garlic. Now comes the fun of finding uses for them. All I found in EYB was



While they nicely show that fermented honey has a range of uses, it is a rather small sample of recipes. Have you run into any other unindexed recipes that use fermented honey.

I recently purchased "Sweet nature: a cook's guide to using honey and maple syrup" by Beth Dooley & Mette Nielsen. Amazon says it will be released at the end of April 2019, but I found a copy in a local bookstore. The book is about evenly divided between maple syrup and honey recipes. None of them specify fermented honey, but there are many savory recipes where jalapeno-, onion-, or garlic-infused honey would be appropriate: Curry marinated herring; Asian ginger honey sauce; Honey pickled garlic with lemongrass and ginger; Honey pickled cucumbers; Hot and sweet cherry relish; Simple honey garlic vinaigrette; Garlicky collards or kale; Tangy-sweet glazed roasted roots; Cauliflower with Persian spices; Curried carrots; Farro with fennel, spinach, and hot pepper; Millet salad with avocado and citrus; Middle East spiced garbanzo beans; Spicy sweet Asian noodle salad; Simplest ever vegetable curry; Stout and buckwheat honey-braised beef short ribs; Sticky lamb ribs, hot and sweet; Asian pork ribs; and Lamb tagine with dried fruit and honey. The book contains about 110 recipes, both savory & sweet. Good luck!
