I just harvested my 30th lemon cucumber from my garden with at least 50 more on the way!  Please point me to your favorite cucumber recipes.

I have two in heavy rotation.  The first, easy one, is bacon, cucumber and tomato sandwich.  The crunch is grand.  The other favorite is Shrimp and Wing Bean salad from Burma, Rivers of Flavor. Cucumbers are the recommended substitute for the wing beans.  I've tried both and prefer the cucumbers.  This salad can be bulked up by putting it over wide rice noodles, or can be eaten as is.


While not technically pickling cucumbers, since you have plenty  how about some pickles?  The dill pickles in Vinegar Revival are great and just need to go in the fridge.  I have made these with mini pickles and it worked as well as with standard pickling cukes.  I will likely be called upon to make them with regular cucumbers this winter, since I can't seem to make enough for my family.

I love these and I've made them several times:

But the 1/2 cup vegetable oil called for is ridiculous! I use 2 tbs, which is 1/8 cup, and they come out great. I use peanut or grapeseed oil for this. If you aren't using pickling cucumbers, just do it in chunks instead of spears as the recipe suggests for the original Sichuan salad, and maybe seed them.


And a tip I picked up from Harold McGee's "On Food and Cooking": snip off both ends of the cucumbers when pickling; they contain an enzyme the causes softening and you won't get crisp cucumbers.
