Ideas for Avocados in Breakfast meals   Go to last post Go to last unread

Greetings, fellow EYbookies. I've discovered that eating 1/3 to 1/2 of an avocado in my breakfast keeps me full for four to five hours until lunchtime. That’s helping me from overeating. My challenge is I only have a couple of recipes I use. I'd love some ideas for expanding my avocado repertoire in the morning beyond egg and avocado toast or avocado, yogurt, and kale or spinach smoothie. I will appreciate any idea you have.

More variations of the "on toast" ideas. Grilled bacon or smoked salmon and I'd have some roasted baby plum or cherry tomatoes on the side. Also, mix some finely chopped red chilli or chipotle flakes into the smashed avocado. I'm in the UK and the problem here is finding decent avocado's.

I have three that I like. First is huevos ranchera with either smashed or sliced avocado using the mildest salsa for ease. Second one using carb balance flour tortilla cut in half filled with avocado slices, scrambled egg with some salsa - can add other protein of your choice too.  Use the other half tortilla next day.  One half is usually enough for breakfast for me. Third one is more Japanese as avocados are hugely popular in Japan and they use it for many recipes. Slice the avocado in half (keep the skin on), brush both slices with mixture of 1 tsp each soy sauce and white miso. Then add one egg yolk each to avocado topped with cheese of your choice and baked at 350 F to your liking of cooked egg doneness. The whites can be used next day to making omelette with avocado and chopped tomato.  Avocado goes extremely well with miso, soy sauce and cheese.

pamsy & Rinshin, These are good ideas I'm going to try. I especially like the Japanese baked avocado recipe as I've never baked an avocado or eaten it with miso or soy sauce, so I’ll try it.  
Pamsy, it's  interesting to hear that avocados are hard to come by in the UK. When I went to my Wegman's in northern Virginia today, the bin was nearly overflowing with avocados- some ripe and some unripe. They (Haas) have Mexico stickers on them this time of year.

Anoint a slice of toast with mayo with curry powder mixed into it. Top with avocado and then cheddar slices. Broil or nuke to melt the cheese. Sprouts can go under the cheese as well.
