I'd really like to be able to edit the names of some of my bookmarks, but there is no obvious way of doing so except for deleting the bookmarks and creating new ones. Of course, then I'd have to pull up all of the recipes that were tagged with the old bookmarks and retag them with the new ones, which is completely inefficient.

Sorry, you cannot change the name of Bookmarks currently.  We have a wishlist of things we want to improve on Bookmarks and that is on it.  Sorry I can't give you a date for when it will happen as we have some other major development work we are doing, but it will get done.
