Hello


I am catholic but my sister eats kosher (not strictly but she does not mix milk and meat). Anyway, she is visiting and I wanted to do some savoury muffins or madeleines, with French cheese reblochon (akin to Italian Taleggio or Fontina), but most recipes call for lardons (i.e. French pancetta cubes).


Any idea on how to up the recipe without using bacon? I thought maybe onion and cumin, but... if it was me I would just use bacon :)

For me i tend to look for seafood and first thing that pops up is lox or hot smoked salmon.

Yes that would have been a wonderful idea but she does not like fish :)


I don't even know if she is going to eat the muffins as normally she does not like strong cheeses, but thought when cooked it would be easier, and this was kind of a ploy to make her try :)


Yeah she is a bit special with food. She used to be worse though and my other sister the same. I think I am the only one in the family who eats mostly everything.


Anyway, I have done : spiced apples + reblochon muffins finally, because it occurred to me that I had some apples to use up, and that they will go well with the cheese.


Verdict tonight :)

I'm a bit late sorry but there's a fabulous book called Baconish that gives veggie bacon replacements. From memory you can make carrot bacon, mushroom bacon, coconut bacon etc. If you need this again might be worth experimenting!
