I've been cooking corned beef every St. Patrick's Day since my early 20's.  That's multiple decades and I normally buy whatever corned beef I can find at the market.  This year I found Kobe style corned beef from Snake River Farms - a little more price but I am in total awe. Found it at Costco.  The taste and tenderness was the best corned beef I've ever eaten.  Now I am soo hooked.  I followed the direction on the package instead of using my own version or other recipes. 

I too found and bought a Snake River Farms Kobe Corned Beef at Costco.  The price was worth it.  I am no young chick, and I've been making the traditional corned beef dinner almost every St. Pat's Day.  This was the best corned beef we've ever tasted.  I used a variation of  Suzanne Goin's receipe from her cookbook.  Her Mustard-Parsley sauce made it!!!

Wow, the mustard parsley sauce sounds just wonderful.  I could not believe how succulent, tender, full of flavor this corned beef was. 

I just got back from Costco with two of the Snake River Farms Waygu Corned Beef. I have tried to find it there ever since the first post on this topic three years ago but had no luck until today. In case anyone else in my area is looking for it, I found them at the Hillsboro, Oregon Costco and would guess that they are probably also available at other Costcos in the Portland, Oregon metro area. I can hardly wait to cook one this coming weekend for St Patrick's Day. The second one went into the freezer for later.

I've bought Snake River Farms corned beef 3 times from Costco and twice from Snake River Farms online - so 5 times.  Only once did I find very, very lean corned beef that I was not happy with.  Today, I too went to Costco to pick up the corned beef and I was really checking out to make sure all the marbling was there.  Good luck!
