More rare ingredients:

Sherry flavoring. If rum flavoring can be found in every supermarket (at least in NYC), why is sherry flavoring so scarce? (Should I say hard to find - can anything be hard to find if Amazon carries it?)

Whippable egg whites: egg whites in cartons can be found in supermarket dairy cases and freezers, but they're not the kind that can be whipped into stiff peaks.

Why did they disappear? Were they found to be carcinogenic or something?

I'm not asking what you can substitute. I'm asking why they disappeared.

What makes me wonder about sherry flavoring was that Betty Crocker's Picture Cookbook of 1950 suggested sherry flavoring and rum flavoring as ways to add flavor interest. On the page with that suggestion was a line drawing of a woman whipping up some treat for two eager children. The assumption seemed to be that this, like everything in BC 1950, was part of "family" cooking, suitable for those too young to drink alcohol. So how come rum flavoring is mainstream but sherry flavoring is not?

Sherry flavoring is available on Amazon, from Bickford flavors, etc. al. I suspect it is simply a matter where shelf space is better utilized on other products. I find sherry and port frequently used in recipes while rum is often used in flavoring form rather than as liquor.


As for egg whites, having never bought or used them except in crack-the-shell form, I have no clue.

I know about Amazon and Bickford; that's why I asked, semi-rhetorically, can a product be hard to find if Amazon carries it?

As for whippable egg whites, I'm a klutz who has not yet mastered the art of cracking eggs so that the yolks don't break :(

Well, having grown up with the nearest town having a population of 125 counting Grandma's goats ... just about anything can be hard to find.

I found whippable egg whites in cartons in my grocery store. I used them recently for an angel food cake.
