Not a huge fan of coconut milk. Not so much the taste as the fat content & emulsifiers/stabilisers etc in them. Looking to make a number of Thai & Indian recipes next week that call for coconut milk anyone have any ideas on what I can sub it for?

Thanks

I'd suggest making your own coconut milk and cream from desiccated or other dried coconut. It is quite easy. There are lots of recipes eg this one: https://zerowastechef.co...made-from-dried-coconut/

I feel the same way and I just started making my own from dissolving 100g of creamed coconut block in 400ml boiling water.  This avoids the use of emulsifiers.  Unfortunately 100g of creamed coconut has 64g of fat - whoops!
