Brunch recipe suggestions requested   Go to last post Go to last unread

I'm having a small brunch on 1/21. My work life is demanding so I'm looking for delicious recipes that are make-ahead or ready in 2 hours. I thought it might be fun to use the New Years Resolution theme and offer some healthy options but...it is a party so I would be willing to compromise. One guest does not eat beef or pork.

I'm open for suggestions. Consider me a home cook who's been cooking for 40 years but not a chef.

I find stratas are good for brunches as they are put together the night before then left overnight in the fridge and just need to be put in the oven the next day. These are the stratas for which there are online recipe links.


In the same planning ahead spirit it would be good to have baked goods that can be made ahead, like coffee cakes. I make a wonderful orange and almond cake by Claudia Roden that works reallly well baked ahead.

Diane Phillips has two books that are entirely entertaining "Do-ahead" recipes (she has another do-ahead book, but it's not entertaining specific). They both have menu ideas for breakfast, brunch, lunch, dinner, and appetizer parties.

I have used "Perfect Party Food" many times - it's by far my most post-it'd cookbook. I had a fancy brunch at my house a few years back for 20 people, and made the "Praline apple French toast" and two different versions of the "Crustless quiche Lorraine," and they were a huge hit, both in appearance and taste. I have made the quiche several times over the years, it's a family favorite for Christmas brunch. I have made many of her quiche variations and have made up my own - one combo that I have noted in my book that I remember was quite good is feta, spinach and chicken sausage. The French toast recipe is actually a pie - the pecans are arranged in the pie plate, and the other ingredients are poured over and when done, you flip it upside down on a platter. It is beautiful, and the smell is heavenly.

This one is out of print, but several sellers on Amazon have it. It has complete menus for entertaining through the year. I only recently purchased it, and have only made one recipe out of it so far, the "Sweet corn, spinach, and bacon breakfast tortes." Not fancy, but easy and good. They would be great for a buffet.


These recipes aren't online, so you will have to get one of the books (I would recommend Perfect Party Food - it has four times the recipes), but if you want to cook ahead for entertaining Diane Phillips books can't be beat.

Yep, that's it! :)


You can mix all of the ingredients and store overnight in the fridge (in the original the bacon is cooked, crumbled and mixed in with the rest). It saves time and mess the day of. You can also cook them ahead, and reheat later - I think they are best fresh cooked though. To make a full size quiche, use a large pie pan and cook for 40-50 minutes.


Since one of your guests won't eat beef or pork, you can use diced chicken, tiny shrimp, or add more veggies and leave out the meat altogether (I have added baby white corn kernels for textural interest - yum). I swap out the cheese sometimes with pepper jack, gouda, cheddar, or feta (I gently stir in the feta just before cooking when I use it - I don't add it the night before). I have used all kinds of combos of meats, cheeses and veggies for this recipe and it always comes out well.


My daughter hates "creamy" stuff, and this quiche is pretty creamy. When she is going to be eatting it I add 4 more eggs and replace the heavy cream with 1 cup milk. It's not quite as fluffy as the original, but it's still delicious, and probably better for you.

If you have time ahead of the event (like a week) you can cure a big piece of salmon. The curing takes about 5 minutes to prepare then you put it in the fridge & forget about it for about 36 hours. Rinse then wrap, you can slice it quickly the night before. I highly recommend the Jamie Oliver recipe in his Christmas book, the recipe for Gravadlax is on his website. It looks impressive on the table and tastes incredible with very little effort. Serve with bagel halves and cream cheese.

Gravlax would be a hit for sure. Did you know that thera are 111 online recipes for it on EYB. Let me direct you to the next one: Salmon gravlax with gin by the Hairy Bikers on BBC food. The page has even a video showing how to prepare it.

The party was a hit. I made the quiche using the substitution of chicken sausage, spinach, and feta. I also made the potato fries in the Perfect Party Cookbook but I made them with the rosemary option. I served a simple fruit salad of chopped pears and apples with a squeeze of an orange, added pomegranate seeds, and stirred together with whole cream yogurt and topped with granola. For dessert I served Doris Greenspan's World Peace cookies which had baked while we were eating so they came to the table warm with a glass of milk. It was great fun, easy to work into a 50 hour work week and proved I can work and entertain!! Thank you all for your help.
