BBC has an interesting article on a cookbook author Sallie Ann Robinson The chef preserving Gullah culture through storytelling - BBC Travel Entering the authors name into EYB yields 3 books only one of which I own and can recommend. Cookbooks | Eat Your Books 

There are some other Gullah cookbooks in EYB by Matthew Raiford, Sharon Kaye Hunt, Charlotte Jenikins with William P. Baldwin, Veronica Davis Gerald with Jesse E. Gantt Jr., and Oscar Vick. It may be a small portion of Southern cooking or more precisely Georgia low-country Southern cooking, but the recipes are well worth exploring.

I remember Sallie Ann Robinson as a guest chef on "Anna and Kristina's Grocery Bag".  During the show she spoke about the history, cultural importance and style of Gullah cooking....a very personable and truly knowledgeable individual :)
