Can anyone in the UK recommend a good book of sauce recipes?
Not in the UK, so I probably shouldn't say, but Sauces by James Peterson is excellent and really thorough. I'd imagine it's printed there.
Sauces by Michel Roux is excellent, especially for French sauces. It was originally published in England.
I do not recommend it for Asian or Mexican/South American sauces though.
Not sure why the UK connection but I'd agree with the Sauces by Michel Roux.
I'm not in the UK but The World Sauces Cookbook by Mark C. Stevens is worth a look.
Also not in the UK, but one of my favorite cookbooks is about sauces:
A Fresh Look at Saucing Foods by Deirdre Davis. It was published in 1992 but the whole approach is modern and creative.
