What to do with leftover cake?   Go to last post Go to last unread

I have quite an amount of left over simple orange cake - I made too much and then had to go on a business trip, and I have too much to finish in time. It was in the fridge and still smells and tastes fine, but there is way too much I can eat!
I had the idea to do a chocolate cake with crunchy orange cake breadcrumbs, or to use the same breadcrumbs as a cheesecake base. Any other idea?

I don't have any ideas off hand, but if you do an EYB recipe search for "leftover cake" you get some, and there are a lot of recipes under the ingredient "Cakes" that call for various kinds of cakes as an ingredient.

Also, a search for the ingredient 'cake crumbs' pulls up 174 recipes; 15 of them are online, and the rest could give you some ideas. Might I add, too much leftover cake is a wonderful "problem" to have! Can you freeze whatever you can't eat right now?

I didn't have such luck as you, I think the results were polluted by a lot of cake recipes, lol :)


I had better chance with stale cake and it looks like loads of British desserts are based on stale cake + an italian one + a cookie recipe


But I dug up a little bit more on the web, and came back with cake pops and cake balls <3 <3

Ah ah I already did !!! I completely went into cooking overload that day and bang! next day have to go to Madrid on business trip. My roommate felt sorry for my cake and packed it up, labeled it and put half in freezer, half in fridge. I am going through the fridge pieces now !! I did eat two slices, but there is still so much left, it's just a heartbreak to let it go! If I do another recipe with it I gain a few days and can bring it at work, etc.

You  might try "Romkugler", which are Danish truffles made with rum and leftover/stale cake. I've also seen them made with coffee or orange juice instead of rum. They are a popular way to use stale cake in Danish bakery shops.

Trifle is the first thing that comes to mind, as it uses cake pieces and can be adapted w/o a recipe- cake, complementary fruit (+/- syrup) and whipped cream. Orange blossom syrup goes nicely with berries...

Trifle was the first thing that came to my mind as well. Some bread pudding recipes can be adapted. Even better if the cake is a bit stale. I once overcooked brownies and they were too hard to even bite into. They were destined for the bin until I decided to try making a bread pudding with them, adapting a basic bread pudding. Best thing I ever made (but I do love bread puddings). I just have to overcook brownies to make it again!


A trifle or bread pudding with other light fresh flavours would be nice, but you have to be a pudding kind of gal.


Your post reminded me that I have leftover cake in my freezer...

There are recipes for doughnut pudding, which I keep in mind for when my doughnuts get crushed in transit. I imagine one can work with a doughnut pudding recipe to make a cake pudding recipe.

In my country we hava a cake from leftover of other cakes named "potato cake". I make from leftovers and cacao and some milk, everything mixes and make with hands like a potato. Kids love the cakes and when they eat it it will be all over the baby clothes.
