Making sushi vinegar - storage question   Go to last post Go to last unread

A really simple question, but I can't find the answer anywhere, I'm sure someone here can advise.


If I make my own sushi vinegar (simmering rice vinegar with sugar and salt) how long can I store it for before using, and is there a "best" way to store it? Is it the kind of thing that will keep indefinitely in an air-tight glass bottle in the cupboard, or not necessarily?

According to the web site "still tasty": "Properly stored, rice vinegar will generally stay at best quality for about 2 years, but will stay safe indefinitely".

Thank you! Although that begs the question, what constitutes "properly stored"?

refrigerated about 37F in a sterile bottle with tight lid.
