Hi there

I regularly find myself with leftover / oldish salad and I was looking for recipes to use them up 

My current go to recipe that I love is  Celeriac, lettuce and pea soup recipe | Eat Your Books

I also found those but haven't tried them yet : Grilled romaine lettuce recipe | Eat Your Books and Lamb and vegetable summer soup (Hotch potch) recipe | Eat Your Books

I am looking to add more variety, or even a rotation, to my "let's use up this old salad" recipes, do you have any ideas? What do you yourself do with them?

I use them in soups esp quick Asian styles, stir fry noodles, and after stir frying mix with mashed potatoes, sweet potatoes or kabocha to make korokke ie croquettes. 

Turned into filling for sandwich wraps, simply add protein.

Added to any in-process stock-based soup.

Thrown into the 'for stock" bag in freezer.

If it doesn't already have dressing on it, add it to smoothies.

Forgot one more.  Fried rice.  Lettuce goes well with fried rice.  Better if there are other cut up vegetables in the salad.

I love the croquette idea ! I would try that :) Yeah I reckon rice would work well too. I suppose also they go well in any soup, indeed.

Re-freezing @Fyretigger, I wouldn't suppose it freezes well, doesn't it go all lumpy when it thaws? Or do you have some tips maybe?
