I see recipes calling for large flat mushrooms in British based recipes and wondering if these are portobello mushrooms?  Or, are they just smaller than average sized portobello mushrooms found in the US?

Rinshin, the British recipes will be referring to Portobello mushrooms and they’re just the same as in the U.S.

Thank you FJT.  I find most US stores have a very small selection of mushroom varieties, but normally carry Portobello mushrooms.  What do you call common button mushrooms in UK?

Generally we call them button mushrooms.

Supermarkets and green grocers over here in the UK are carrying large selections of mushrooms,

Agree,  portobello, but occassionally in recipes the really big ones are referred to as field mushrooms, which is strictly speaking wrong - they are only field mushrooms if you find them growing in a field, not cultivated!

As well as white button mushrooms (champignons de Paris) we have chestnut mushrooms which are usually just a little chunkier, darker,  and more strongly flavoured: these are my default mushroom.  I think you have them in the US too, as I had a recipe that needed them recently.

I normally buy most mushrooms at Asian markets in The US.  The selection is large, but smaller than in Japan.  I normally only buy button and Portobello mushrooms at regular markets. Sometimes, they have other varieties but never as many as Asian markets.
