What is "Dry" Butter?   Go to last post Go to last unread

Included in a patisserie recipe I saw "dry butter" as an ingredient. I have no idea what this means (ChatGPT listed it as clarified butter that had ben allowed to resolidify but who trusts that AI LLM without corroboration?)

Dry butter has a moisture content of 12-16% while regular butter is always around 16%; dry butter has a fat content of 82% or so compared to 80% for regular butter. Translation - less spreadable, stronger flavor than regular butter and as was said above, more easily rolled into flat sheets for laminated pastries.
