In _The Other Half of the Egg: Or 180 Ways to Use Up Extra Yolks or Whites_, there is a recipe for Cheese Fritters.
2 egg whites beaten, salt, 1/4 cup grated Swiss cheese, crumbs from 2 slices of bread, then deep fried.
For me after all the usual suspects are accounted for I use them for extra crunchy granola.
I like these two last suggestions ie fritters and granola. Will try that when I have leftover egg whites which is rare as we normally do not eat desserts at home esp my husband. But, I do like angel food cake.
Right - I'm definitely going to have to try some of these suggestions now: 5 egg whites in the fridge from today's batch of chocolate ice cream and 5 in the freezer!!
