Searching for how it is accomplished, I found a wonderful video of a chef who goes by Salty Seattle, demonstrating some of the techniques, and searching on her name show many more examples:

Thanks so much for sharing this - the pasta in the slide show was stunning.  The short video was also great with all the ideas for achieving the very vibrant colours - the bright blue in particular baffled me.  Also, the use of the base sheet under the stripes/patterns certainly explains alot of the technique - I have a pasta roller/cutter and might try a simple (2, 3 or even 4 coloured) striped lasagna one of the these days.  Such a cool thing to be creating :)

Thanks for sharing.  They are all beautiful.  The Seattle one seems to have number of cool equipments.  I especially like the one for making ridges like in gnocchi.

Wow! Inspired to try some of those from the Seattle video! The pea colour is well known in South East Asia .. I'm going to see if I can get some seeds to grow here in Bris-Vegas!

The small version of that board, as a small paddle, is similar in price to a good lemon reamer. I know I’ve seen them at Sur la Table, but admittedly not recently.

Thank you.  Found it for $9.95 at Sur la Table as you indicated.  Will make  gnocchi making much easier than using a back of fork.  They also had good sale going for other items and bought a very nice traditional quiche ceramic dish. Been using a pie pan but I make enough quiche to justify this purchase.
