  • Strawberry jam & brown butter melting moments (Shortbread biscuits)

      This is the best melting moment recipe I have yet tried. The brown butter makes them really special. I happened to have raspberry jam, not strawberry, but this was perfect. Also, I replaced the cornflour with custard powder because this is how my grandmother always made melting moments and I feel they are not quite right without it. I used gluten free flour cup-for-cup and they held together well. Highly recommended!

Raspberri Cupcakes is the latest Australian blog to join EYB. Stephanie Hooi is focused on baking and, yes, she does know that "raspberry" is usually spelled with an "y." She writes extensively about each recipe so there is very little left to chance when you tackle one of her baked goods.
