    My family's favorite pancake recipe...delicious & fluffy. A few modifications...substitute buttermilk for whole milk. You'll need extra buttermilk or they'll be super thick. Cook pancakes on griddle, then finish baking in a not too hot warmed oven. Second, brush griddle with clarified butter, not regular butter, the clarified doesn't burn. Lastly, omit blueberries from the pancakes, they make the griddle too sticky. Instead, gently warm fresh or frozen blueberries in a separate pot with a little sugar and some lemon juice. Serve this sauce at the table along with real maple syrup.
